TOMATO AND VEGETABLE SOUPServes 6 – Calories per serving 190
- 1 carrot finely sliced
- 1 potato finely chopped
- 4 fresh tomatoes chopped
- 1 pepper with the seeds removed and chopped
- 75g of green beans chopped
- 100g of grated broccoli
- 400g tin chopped tomatoes or the equivalent of fresh plum tomatoes
- 1 can/jar of kidney beans
- 1 litre vegetable stock
- 1 tbsp mixed herbs
- Place all the ingredients into a pan and cook until vegetables are soft.
- Enjoy your Tomato and vegetable soup for lunch, a snack or dinner.
