TOMATO AND VEGETABLE SOUP

Serves 6 – Calories per serving 190

INGREDIENTS:

  • 1 carrot finely sliced
  • 1 potato finely chopped
  • 4 fresh tomatoes chopped
  • 1 pepper with the seeds removed and chopped
  • 75g of green beans chopped
  • 100g of grated broccoli
  • 400g tin chopped tomatoes or the equivalent of fresh plum tomatoes
  • 1 can/jar of kidney beans
  • 1 litre vegetable stock
  • 1 tbsp mixed herbs

 

INSTRUCTIONS:

  1. Place all the ingredients into a pan and cook until vegetables are soft.
  2. Enjoy your Tomato and vegetable soup for lunch, a snack or dinner.
