RAW SWEET POTATO NOODLES

Serves 6 – Calories per serving 115

INGREDIENTS:

  • 3 sweet potato peeled
  • 1 red onion chopped finely
  • Juice of 1 lemon
  • 2 tbsp balsamic vinegar
  • 1 clove of garlic crushed
  • 12 walnuts crushed
  • 2 tbsp agave syrup
  • 1 red pepper chopped small
  • 1 green pepper chopped small

 

INSTRUCTIONS:

  1. Put the potato through the spiraliser. Drop the noodles into warm water for a few minutes. Then remove, drain and place to one side.
  2. In a large bowl, mix the balsamic, garlic and agave. Put the noodles into the bowl and gently mix to ensure all the potato is coated.
  3. Now add the walnuts and peppers and again gently ensure they are mixed well. Raw Sweet Potato Noodles can be enjoyed warm or cold as a salad.
