FATTOUSH

Serves 6 – Calories per serving 46

INGREDIENTS:

  • 1 romaine lettuce torn into pieces
  • 1 cucumber seeds removed and diced
  • 2 tomatoes seeds removed and diced
  • 2 spring onions finely sliced
  • 1 large bunch parsley finely chopped
  • 1 bunch of fresh mint finely chopped
  • 1 green pepper finely chopped
  • 1 large handful of rocket leaves torn
  • 1 tbsp apple cider vinegar
  • Zest of half lemon
  • 1 garlic clove crushed

 

INSTRUCTIONS:

  1. In a small jug put the vinegar, lemon zest and garlic and leave to infuse.
  2. In a large bowl put all the other ingredients and mix well.
  3. Just before serving the Fattoush, sieve the dressing to remove the garlic and pour over the salad and toss well.
