- 1 romaine lettuce torn into pieces
- 1 cucumber seeds removed and diced
- 2 tomatoes seeds removed and diced
- 2 spring onions finely sliced
- 1 large bunch parsley finely chopped
- 1 bunch of fresh mint finely chopped
- 1 green pepper finely chopped
- 1 large handful of rocket leaves torn
- 1 tbsp apple cider vinegar
- Zest of half lemon
- 1 garlic clove crushed
- In a small jug put the vinegar, lemon zest and garlic and leave to infuse.
- In a large bowl put all the other ingredients and mix well.
- Just before serving the Fattoush, sieve the dressing to remove the garlic and pour over the salad and toss well.
